A Vegetarian Lasagna Recipe To Satisfy Your Hunger

Have you recently become a vegetarian? Have you found that you are limited to eating only a few recipes compared to what you used to when you did eat meat? Don't be dismayed because there are a few vegetarian dishes that you can enjoy and they can even be as delicious as Italian pasta. Try out this vegetarian lasagna recipe and satisfy your palate today.

Step 1

First thing you need to do is prepare all the ingredients for this vegetarian lasagna recipe. It's not that difficult; all you need is an eggplant, some frozen spinach, lasagna noodles, a pack of low-fat cheese, a jar of meatless sauce, a pack of mozzarella, some salt and pepper, tomatoes, and parsley flakes. Keep in mind that the cheese you have to use must be healthy. You can find all of these ingredients in a supermarket.

Step 2

Now you need to defrost the spinach. When doing this, chances are that it will be wet and messy but you have to get rid of all the moisture so drain as much water as you can. You can use some kitchen utensils or even dry cloth to help you get rid of the water in the spinach which is needed in the vegetarian lasagna recipe.

Step 3

The eggplant that you bought is whole so you will have to slice it into thin pieces. These pieces should be thin but thick enough that they can be cooked easy. Lay the pieces on a piece of cloth so that you can salt them. Then put another cloth on top of the first one to salt some of the remaining pieces that you might have left.

Step 4

All lasagna, even a vegetarian lasagna recipe like this, is dependent on how it's cooked. For the noodles, place them in a pan and place that pan on top of a cookie sheet that is heated on an oven. This will help evenly distribute the heat and the lasagna noodles will be cooked in about one or two hours or when you find they are tender. To save time, you can work on the spinach and cottage cheese mix and add a little salt and pepper for flavor.

Step 5

This is probably the most difficult part in cooking your vegetarian lasagna recipe. You will need a casserole pan that has sauce spread out evenly inside it. Then add a layer of the lasagna noodles that you just cooked with another layer of eggplant, some sauce, cottage cheese, the mix of spinach that you made, and then top it off with one more layer of lasagna noodles. Do this again until you are satisfied with the thickness of your lasagna.

Step 6

Now here's the easy part. Add the final layer to your dish which will consist of mozzarella cheese, tomato sauce, and sliced tomatoes. Then use some parsley flakes.

This vegetarian lasagna recipe needs to be baked and you will need to prepare your oven at about 350 degrees. Place the dish inside the oven for about an hour or until you notice that the eggplant is brown and soft because this will mean that you can now eat it. You can't go wrong with this simple vegetarian lasagna recipe dish.
